Pho has become a popular hit dish throughout the US. This recipe I plan to share with you today is Oxtail pho that I’ve been working. The best part is this is made in an instant pot.
This dish is slowly steeped with cinnamon, cloves, ginger and other Asian secrets recipes and poured over rice noodle.
- 4-5 lbs of Oxtail
- X gallons (depend how big your Instant Pot is) of Filtered Water
- 4 pieces of Ginger
- 1 large White Onion
- 8 Whole Star Anise
- 7 Whole Cloves
- 2 Cinnamon Sticks
- 8 Whole Cardamom Pods
- 1 tsp Fennel Seeds
- 1/2 tsp Coriander Seeds
- 1/2 tsp Whole Peppercorns
- 5 Bay Leaves
- Rice noodles
- 2 Ibs of Beef (optional)
- Pork/beef Meat Balls (optional)
- Bean sprouts
- Fresh basil
- Fresh cilantro
- Fresh scallions or green onion
- Lime wedges
- Jalapeño coins
- Sriracha sauce
- Fish Sauce
Step 1: Prepare your Broth Ingredients
Wash the Oxtail bones. If you have a small ingredient bag, add in Ginger, White Onion, Whole Star Anise, Whole Cloves, Cinnamon Sticks, Whole Cardamom Pods, Fennel Seeds, Coriander Seeds, Whole Peppercorns and Bay Leaves in the bag.
This is something easy to pick up at the store if you don’t want to buy the ingredients separately. You can find it at your local Asian markets.
Step 2: Make you Broth
In your Instant Pot, add water to the max and the ingredients (Ginger, White Onion, Whole Star Anise, Whole Cloves, Cinnamon Sticks, Whole Cardamom Pods, Fennel Seeds, Coriander Seeds, Whole Peppercorns and Bay Leaves) to favor the water. Press Soup on the menu and start without the cover. After the 10 minutes, add in the Oxtail bones. Allow this to cook on low for 4 hours with the cover on, double that time without the cover.
Step 3: Prepare your Side Ingredients
While you are letting the broth cook, start prepping your side Ingredients. Wash and dry all Bean sprouts. Wash basil. Peel ginger and discard peel. Wash the cilantro and green onion and then mince. Wash Lime wedges and slice the lime into wedges. Wash the beef.
Step 4: Cook your Beef
After you allow your broth to shimmer in the Instant Pot on low for 2 hours, add in beef and meat balls. Let it cook for 2 hours. Take it out the beef and meat balls. Cut beef into thin slices. And cutting the meat balls are optional.
After the broth shimmering for a total of 4 hours, portion the amount of noodles you want into your bowls and top with the side you want in your soup. Remember there is no wrong or right away to eat pho. Some like it sweet, some like it spicy, or like me I love it with extra lime.
Finally add in the broth into your bowl. Feel free to add more spices if it’s not to your satisfaction. Now you’re ready to eat.
